1 pound of lamb or chicken, divided into little pieces.

1 cup of unflavored yoghurt

2 sliced onions

two tomatoes, cut up

2 minced garlic cloves

minced ginger, 1 inch long

1 teaspoon of cumin powder

1 teaspoon of coriander seeds

1 teaspoon of turmeric powder

Chili powder, 1 teaspoon

4 cardamom pods, 2 bay leaves, 4 cloves

1-stick of cinnamon

Salt as desired

Vegetable oil, 3 tablespoons

3 glasses of water

As a garnish

Cooked onions

minced cilantro

sliced mint

Almonds, sliced

Raisins

Instructions:

Rinse the basmati rice many times in fresh water until the liquid is clear. Rice should be drained after 30 minutes of cold water soaking.

Over medium-high heat, warm the oil in a sizable Dutch oven or pot with a heavy bottom. Add the onions and cook, stirring periodically, until golden brown. Half of the onions are removed and are left aside for garnish.

Stirring continuously for 30 seconds after adding the ginger and garlic to the pan. For 5-7 minutes, until browned on all sides, add the chicken or lamb.

Stir in the diced tomatoes, yoghurt, and seasonings (including salt, bay leaves, cardamom pods, turmeric, chilli powder, cloves, cinnamon stick, and crushed cumin). Cook for 5 minutes, stirring occasionally.

Gently whisk in the water and soaked rice after adding them to the pot. Bring to a boil, then lower the heat to a simmer, cover the pan, and cook the rice for 20 to 25 minutes, or until the liquid has been absorbed.

Before uncovering the biryani, turn off the heat and allow it to rest for ten to fifteen minutes. Using a fork, fluff the rice. Add the reserved fried onions, chopped cilantro, mint, slivered almonds, and raisins as decoration.

Serve hot with chutney or raita, a yogurt-based dip (a spicy condiment). Enjoy!
