Rava Kesari recipe

 


Rava Kesari is a delicious and popular dessert in South India. Here is a simple recipe for Rava Kesari:


Ingredients:


1 cup fine semolina (rava/sooji)

1 cup sugar

3 cups water

1/4 cup ghee

1/4 teaspoon cardamom powder

A few strands of saffron

2 tablespoons chopped nuts (cashews, almonds, pistachios)

Instructions:


Heat 1/4 cup of ghee in a heavy bottomed pan or kadhai over medium flame.


Add 2 tablespoons of chopped nuts (cashews, almonds, pistachios) to the ghee and fry until they turn golden brown. Keep them aside.


In the same pan, add 1 cup of fine semolina (rava/sooji) and roast it on medium flame for about 5-6 minutes or until it turns light golden brown. Keep stirring continuously to avoid burning.


Meanwhile, boil 3 cups of water in another pan.


Add the boiling water to the roasted rava slowly and keep stirring continuously to avoid lumps.


Add a few strands of saffron and 1/4 teaspoon of cardamom powder to the mixture and stir well.


Add 1 cup of sugar to the mixture and stir continuously on low to medium flame until the sugar dissolves completely.


The mixture will thicken and begin to leave the sides of the pan. Mix in the fried nuts until well combined.


Turn off the heat and let the pan covered for 2-3 minutes.


Your Rava Kesari is ready to eat. Garnish with more chopped nuts and serve hot.
