 Chicken Majestic is a popular Hyderabadi chicken starter that is often served in Indian restaurants. It is a dish that is made with boneless chicken pieces that are marinated in a flavorful mixture of spices, yogurt, and other ingredients, and then deep-fried until crispy.

To make Chicken Majestic, you will need the following ingredients:

  • Boneless chicken pieces (500g)
  • Yogurt (2 tablespoons)
  • Ginger-garlic paste (2 tablespoons)
  • Red chili powder (1 teaspoon)
  • Coriander powder (1 teaspoon)
  • Cumin powder (1 teaspoon)
  • Turmeric powder (1/2 teaspoon)
  • Garam masala powder (1/2 teaspoon)
  • Salt (to taste)
  • Cornflour (2 tablespoons)
  • Rice flour (2 tablespoons)
  • Egg (1)
  • Curry leaves (a handful)
  • Green chilies (2, sliced)
  • Onion (1, sliced)
  • Oil (for deep-frying)

Instructions:

  1. In a large mixing bowl, add the boneless chicken pieces, yogurt, ginger-garlic paste, red chili powder, coriander powder, cumin powder, turmeric powder, garam masala powder, and salt. Mix well and marinate for at least 1 hour (or overnight in the refrigerator).

  2. In a separate bowl, mix together the cornflour, rice flour, and egg to make a batter.

  3. Heat the oil in a deep-frying pan. Dip the marinated chicken pieces in the batter and deep-fry until golden brown and crispy. Remove from the oil and place on paper towels to remove any excess oil.

  4. In a separate pan, heat some oil and fry the curry leaves, green chilies, and sliced onions until they are lightly browned.

  5. Add the fried chicken pieces to the pan with the curry leaves, green chilies, and onions. Toss everything together until the chicken is well coated with the onion mixture.
