Chicken Tikka Masala is a popular Indian dish that consists of marinated chicken pieces that are grilled or roasted and then cooked in a rich tomato-based sauce. Here is a recipe for Chicken Tikka Masala that serves four:

Ingredients:

500g boneless, skinless chicken thighs, cut into bite-sized pieces

1/2 cup plain yogurt

1 tablespoon vegetable oil

1 tablespoon lemon juice

2 teaspoons garam masala

2 teaspoons paprika

1 teaspoon ground cumin

1/2 teaspoon ground coriander

1/4 teaspoon cayenne pepper

1/4 teaspoon ground turmeric

Salt, to taste

2 tablespoons unsalted butter

1 large onion, finely chopped

3 garlic cloves, minced

1 tablespoon grated ginger

1 tablespoon tomato paste

1 can (14 oz) crushed tomatoes

1/2 cup heavy cream

Fresh cilantro leaves, for garnish

Instructions:

In a large bowl, combine the chicken, yogurt, oil, lemon juice, garam masala, paprika, cumin, coriander, cayenne pepper, turmeric, and salt. Mix well, cover with plastic wrap, and marinate in the refrigerator for at least 1 hour, or up to overnight.

Preheat the oven to 400°F. Line a baking sheet with parchment paper or aluminum foil. Arrange the chicken pieces in a single layer on the prepared baking sheet and bake for 15 to 20 minutes, or until the chicken is cooked through and lightly browned.

In a large saucepan, melt the butter over medium heat. Add the onion and cook for 5 to 7 minutes, or until soft and translucent. Add the garlic and ginger and cook for another minute.

Stir in the tomato paste, crushed tomatoes, and cream. Bring to a simmer and cook for 10 to 15 minutes, or until the sauce has thickened.

Add the baked chicken to the sauce and simmer for 5 to 10 minutes, or until the chicken is coated in the sauce and heated through.

Serve hot, garnished with fresh cilantro leaves.
