Gobi Paratha is a popular North Indian dish made with stuffed whole wheat bread with spiced cauliflower stuffing. Here's a recipe for gobi paratha:


Ingredients:

For the dough:


2 cups whole wheat flour

Salt to taste

Water as needed

For the stuffing:


2 cups grated cauliflower

1 teaspoon grated ginger

1-2 green chillies, finely chopped

1/2 teaspoon cumin powder

1/2 teaspoon coriander powder

1/4 teaspoon garam masala powder

Salt to taste

1 tablespoon oil

Finely chopped coriander leaves for garnish

Instructions:


In a bowl, add whole wheat flour, salt and mix well. Add water gradually and knead the dough till it becomes smooth and pliable. Cover and keep aside for 15 minutes.

In a separate bowl, add grated cauliflower, grated ginger, green chillies, cumin powder, coriander powder, garam masala powder, salt and mix well. Remove any surplus water by squeezing the mixture.

Heat oil in a pan and add the cauliflower mixture. Cook on medium heat till it is soft and all the moisture has evaporated.

Allow the cauliflower mixture to cool down completely.

Make equal-sized balls of dough and roll each one into a small circle.

Take one circle of dough and place a tablespoon of the cauliflower mixture in the center. Fold the edges of the dough to cover the mixture and form a ball. Press down lightly.

Dust the ball with flour and roll out into a paratha using a rolling pin.

Heat a tawa or a non-stick pan and place the paratha on it.

Cook the paratha on medium heat, flipping it occasionally till it is cooked evenly on both sides.

Apply some oil or ghee on the paratha and cook it till it turns golden brown.

Garnish with finely chopped coriander leaves and serve hot with curd, pickle or raita.
