Kesari, also known as Kesari Bath, is a famous South Indian sweet dish made of semolina (sooji), sugar, ghee, and spices such as saffron, cardamom, and almonds. Here is a recipe for Kesari:

Ingredients:

1 pound semolina (sooji or rava)

1 pound ghee

3 cups water 1 cup sugar

A dash of saffron

1/2 teaspoon ground cardamom

a handful of nuts, chopped (almonds, cashews, and pistachios)

Instructions:

Prepare a skillet over medium heat and toast the semolina until golden brown. To avoid burning, keep stirring regularly. Take out of the pan & set it asides.

Heat the ghee in the same pan and add the chopped nuts. Remove from the pan once they have turned golden brown.

Bring the water to a boil in the same pan. Combine with a pinch of saffron.

Reduce the heat to low and gradually add the roasted semolina, stirring constantly to avoid lumps.

Sauté for 5-7 minutes, or until the semolina has absorbed all of the water and has softened.

Mix in the sugar until it is completely dissolved.

Mix in the cardamom powder thoroughly.

Mix in the fried nuts well.

Simmer for another 2-3 minutes, stirring constantly, over low heat, until the sauce thickens and leaves the sides of the pan.

Turn off the heat and set the kesari aside for a few minutes to cool.

Enjoy the delectable Kesari hot or warm!

Note: You can modify the amount of sugar and ghee to suit your taste. To make it more colourful, you can add food colouring.
