paddu recipe
Paddu, also known as appe or kuzhi paniyaram, is a popular South Indian breakfast or snack made with a batter of rice and lentils. Here's a recipe for paddu:
Ingredients:
1 cup idli rice
1/2 cup urad dal (split black gram)
1 teaspoon fenugreek seeds
Salt to taste
1 teaspoon oil
1/2 teaspoon mustard seeds
1/2 teaspoon cumin seeds
1/4 teaspoon asafoetida
1/2 cup finely chopped onions
1/2 cup finely chopped carrots
1/4 cup finely chopped coriander leaves
1-2 green chillies, finely chopped (optional)
Oil for frying
Instructions:
Wash and soak the idli rice, urad dal, and fenugreek seeds in enough water for 5-6 hours or overnight.
Drain the water and grind the soaked ingredients in a wet grinder or blender to form a smooth batter.
Transfer the batter to a bowl and add salt to taste. Mix well.
In a pan, heat 1 teaspoon oil and add mustard seeds.. Once they start spluttering, add cumin seeds and asafoetida.
Add finely chopped onions, carrots, coriander leaves, and green chillies (if using). Sauté for 2-3 minutes until the vegetables are slightly cooked but still crunchy.
Add the sautéed vegetables to the batter and stir well.
Heat a paddu pan or aebleskiver pan on medium heat and add a few drops of oil in each of the cavities.
Pour spoonfuls of the batter into each cavity until they are 3/4th full.
Cover the pan with a lid and let it cook for 2-3 minutes until the bottom side of the paddu turns golden brown.
Flip the paddu using a spoon or a skewer and cook for another 2-3 minutes until the other side is also golden brown.
Transfer the paddu to a plate and repeat the process with the remaining batter.
Serve hot with coconut chutney or tomato chutney.
