For chole:

Ingredients:

1 cup chickpeas (chana) soaked overnight and drained

2 onions, finely chopped

2 tomatoes, finely chopped

2 green chilies, chopped

1 teaspoon ginger paste

1 teaspoon garlic paste

1 teaspoon cumin seeds

1 teaspoon coriander powder

1/2 teaspoon turmeric powder

1/2 teaspoon red chili powder

1/2 teaspoon garam masala powder

2 tablespoons oil

Salt to taste

Water as needed

Coriander leaves for garnishing

Instructions:

In a pressure cooker, heat the oil and add the cumin seeds, allowing them to sputter.

Combine the chopped onions, ginger paste, garlic paste, and green chilies in a mixing bowl. Cook until the onions are transparent.

Add chopped tomatoes, coriander powder, turmeric powder, red chili powder, garam masala powder, and salt. Cook until tomatoes become soft.

Add soaked and drained chickpeas, and enough water to cover them. Pressure cook for 5-6 whistles or until the chickpeas are soft.

Once the pressure releases naturally, open the cooker and adjust the consistency of the gravy according to your liking.

Garnish with fresh coriander leaves.

For bhature:

Ingredients:

2 cups all-purpose flour

1/4 teaspoon baking powder

1/2 teaspoon sugar

1/2 cup plain yogurt

2 tablespoons oil

Water as needed

Oil for frying

Instructions:

In a large mixing bowl, mix together the all-purpose flour, baking powder, salt, and sugar.

Add plain yogurt and oil, and mix well.

Add water as needed to make a smooth and soft dough. Knead the dough for 5-6 minutes.

Divide the dough into equal-sized balls and roll them out into thin discs using a rolling pin.

Combine all of the ingredients to form a filling.

Gently slide the bhature into the hot oil and fry until they are golden brown and puffed.

Remove the fried bhature from the oil with a slotted spoon and place them on a paper towel to absorb any excess oil.

Serve hot with chole and your favorite side dishes.
