Masala Khichdi recipe

 


Masala Khichdi is a delicious and nutritious Indian dish made with rice, lentils, and a variety of spices. Here's a recipe to make it:


Ingredients:


1 cup rice

1/2 cup split moong dal

1 onion, chopped

1 tomato, chopped

1 potato, peeled and chopped

1 carrot, peeled and chopped

1/2 cup green peas

1 tsp ginger paste

1 tsp garlic paste

1 tsp cumin seeds

1 tsp mustard seeds

1 tsp turmeric powder

1 tsp red chili powder

1 tsp coriander powder

2 tbsp ghee or oil

Salt to taste

4 cups water

For garnish:


Fresh coriander leaves

Lemon wedges

Instructions:


Rinse the rice and dal together in water and soak them for about 30 minutes.


Heat the ghee or oil in a pressure cooker, add cumin seeds, mustard seeds, and allow them to crackle.


Add onions & saute until they turn translucent.


After adding the ginger garlic paste, cook for a minute.


Sauté the diced tomatoes until they become soft.


Toss in the chopped potatoes, carrots, and green peas. Stir thoroughly.


Combine the turmeric powder, red chilli powder, coriander powder, and salt in a mixing bowl. Cook for 2-3 minutes after well mixing.


Drain and add the soaked rice and dal to the cooker. Stir thoroughly.


Combine everything with 4 cups of water.


Cook for 3-4 whistles on medium heat with the pressure cooker lid closed.


Turn off the heat and let the pressure to naturally release.


Open the lid and give the khichdi a good stir. If it's too thick, you can add some more hot water.


Garnish with chopped coriander leaves and lemon wedges. Serve hot with raita or pickle.
