Dry Chicken Ghee Roast is a popular South Indian dish that is spicy, tangy, and has a rich flavor of ghee. Here is a simple recipe to make Dry Chicken Ghee Roast:


Ingredients:


500 grams chicken, boneless

3 tablespoons ghee

1 tablespoon mustard seeds

1 tablespoon cumin seeds

2-3 dried red chilies

1 tablespoon coriander seeds

1/2 teaspoon turmeric powder

1 tablespoon red chili powder

1 tablespoon tamarind paste

Salt to taste

Curry leaves for garnish

Instructions:


Dry roast the mustard seeds, cumin seeds, dried red chilies, and coriander seeds in a pan until fragrant.


Grind the roasted spices into a fine powder using a spice grinder.


In a bowl, mix the chicken pieces with turmeric powder, red chili powder, tamarind paste, and salt. Let it marinate for 30 minutes.


Heat ghee in a pan, add the marinated chicken pieces, and cook until the chicken is tender and cooked through.


Add the ground spice powder to the chicken and mix well. Cook for another 5-7 minutes until the chicken is coated well with the spices.


Garnish with curry leaves and serve hot with steamed rice or chapatis.
